Lighthouse Keepers Dream

This was meant to be evocative of a lonely isolated location with a dream of love and attention of those at home. Taken on Montague Island, 9km off the coast from Narooma, the idea was great but the execution didn't give the hoped for result - it was too humid and the icecream melted while I was setting up the shots. Tastes fantastic mind, with those white chocolate chunks, the old lighthouse keepers would have enjoyed the experience.

A trip to Kangaroo Island with my siblings on a ancestral trip back in time, my grandfather being a lighthouse keeper on each of the three lighthouses on this glorious island, gave me the opportunity to produce this photo. White Chocolate and Raspberry Basket with Honey Popcorn

With my tub of Derwent Valley Gourmet Icecream, I moulded the ice cream into 6 rounds. I spread the edges with crushed raspberries and covered the edges with white chocolate shards. I then filled my baskets with fresh raspberries and honey popcorn, drizzled with berry puree, and presented my masterpieces on heirloom plates.

Christmas Time with Ice Cream

Celebrate the Australian bush with luscious connoisseur ice cream. In my photo shoot I used the decadent Kangaroo Island Honey & Fig. This is the view from our sun room. My husband and I love sitting here watching the birds and the changing landscape. It was a sinking hot day so I had to work quickly. I used an aboriginal patterned serviette to remind us they were the first Australians. In the background, you can see the gum’s peeling bark which means it’s almost Christmas.

Just like the amazing creations of Chef Pierre Roelofs, we wanted to create a striking and creative sculptural composition. So two friends spent a Saturday afternoon experimenting with texture, colour and form and even more fun eating up the results! As a kid in Tasmania I loved mum’s blackberry and raspberry pie. I remember taking an ice cream container down the paddock to fill with the berry’s, getting dirty and scratched, with always an eye out for tiger snakes. But mum’s pie was worth it when served up piping hot and enjoyed with lashings of ice cream. Connoisseurs Raspberry and White chocolate ice cream brought back my memories of the Derwent Valley and inspired my ‘berry pie’.

Take a ball of Connoisseur Snowy Mountains Blueberry Crumble ice cream, dip in white chocolate and roll in coconut flakes to create an edible ‘snowball’ with a seriously scrumptious centre. I’ve taken inspiration from other snow-kissed countries and served this Snowy Mountains delight atop a Belgian waffle drizzled with Canadian maple syrup. My plated birds nest also reflects this and the beautiful wildlife found in these incredible picturesque regions of Australia. The flavour and crunch of the toffee really compliment the creaminess of the ice cream, the delicate flavour of the blueberries, the chewiness of the biscuit crumble and zing of the blueberry sauce. The fresh blueberries provide a burst of freshness and enhance the colours in the ice cream. Together these flavours and textures are tantalising on the tastebuds!

I can categorically say it is my new “absolute favourite ice cream of all time!” Delicate fresh figs, fresh honeycomb and a drizzle of honey complement what is already an unbeatable flavour sensation. This dessert is so good I don’t want to share it with anyone else. Is that so bad?

CONNOISSEUR Snowy Mountain Blueberry Crumble is as refreshing as an alpine breeze. Pierre Roelofs has created a sweet sensation that is complemented by the tart flavours of blueberries, strawberries and raspberries. A sprinkle of icing sugar is reminiscent of snowfall on the Snowy Mountains, while crushed biscuits are a nod to the biscuit crumble in the ice cream. Can we say that the calcium and antioxidants make this a healthy choice? I think yes. That’s my view and I’m sticking to it!

A wagon wheel and orange segment are used to represent the steamer's wheel, while the Connoiseur Murray River Salted Caramel Ice Cream represents the wake or splashes of water that lap against the steamer's side. Taste-wise, the chocolate of the wagon wheel combines nicely with the chilled citrus to form a jaffa-like flavour that complements the exquisite flavours of the Connoiseur ice cream.
